Ingredientes

  • 2 tbsp olive oil
  • 1 large carrot, diced small
  • 2 celery stalks, diced small
  • 3 cloves minced garlic
  • 1 medium sized red onion, diced small
  • Sauté until the onions soften, then add: 4 cups diced canned tomatoes
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 2 tsp chipotle powder
  • 1 tsp dry thyme
  • 1/2 tsp black pepper
  • salt to season
  • 1 cup fresh or frozen corn kernels
  • 1 tbsp brown sugar
  • Simmer slowly for 20 minutes then add:
  • 1 cup cooked quinoa (about 1/4 cup dry quinoa slowly simmered in 1/2 cup salted water)
  • 2 cups cooked kidney beans (rinsed if you are using canned)
