Receta Vegetarian Quinoa Chili
Ingredientes
- 2 tbsp olive oil
- 1 large carrot, diced small
- 2 celery stalks, diced small
- 3 cloves minced garlic
- 1 medium sized red onion, diced small
- Sauté until the onions soften, then add: 4 cups diced canned tomatoes
- 3 tbsp chili powder
- 2 tsp ground cumin
- 2 tsp chipotle powder
- 1 tsp dry thyme
- 1/2 tsp black pepper
- salt to season
- 1 cup fresh or frozen corn kernels
- 1 tbsp brown sugar
- Simmer slowly for 20 minutes then add:
- 1 cup cooked quinoa (about 1/4 cup dry quinoa slowly simmered in 1/2 cup salted water)
- 2 cups cooked kidney beans (rinsed if you are using canned)
