- 1 bunch beet greens, chopped (from the beets you're going to grill with this)
- For the dressing:
- 4 Tablespoons rice vinegar
- 2 Tablespoons olive oil (sesame oil would be great too)
- 1 teaspoon grated ginger
- 1/2 teaspoon ginger salt (can use regular too)
- pepper
- For the tofu:
- 1 block tofu, cut into cubes
- 3 Tablespoons coarse ground mustard
- 2 Tablespoons pickapeppa sauce
- 1 teaspoon hot sauce
- Splash tamari
- salt and pepper
- To grill:
- the butts of the eggplant pieces
