Receta Vietnamese Sweet Potato Curry
Ingredientes
- 1 tbsp peanut oil
- 2 onions sliced in crescents
- 1 fresh red chile seeded and shredded
- 1 tbsp ground coriander
- 1 1 /2 tsp ground turmeric
- 1 14oz can coconut milk
- 1 1/2 tbsp light brown sugar
- 2 3/4 lb sweet potatoes peeled and cubed
- 2 tbsp fish sauce
- juice of 1 lime
- handful of torn basil
Direcciones
- Heat oil in saucepan and saute onions. Add chile coriander and turmeric and cook for another minute stirring. Add the coconut milk, brown sugar and potatoes. Bring to just under a boil, reduce heat and cook until the potato is tender. To thicken press some of the potato with the back of a spoon to disintegrate.
