.%20There%20are%20already%20a%20few%20Jane%20Grigson%20recipes%20in%20my%20blog,%20including%20my%20best-ever%20pudding,%20Springfield%20Pear%20Cake,%20and%20the%20famous%20Chinese%20Yorkshire%20pudding%20featured%20in%20English%20Food%20%E2%80%94%20a%20must-try%20if%20your%20Yorkshires%20always%20flop.%3C/p%3E%3Cp%3EI%E2%80%99d%20planned%20to%20do%20something%20I%20hadn%E2%80%99t%20done%20before,%20but%20time%20was%20pressing%20so%20I%20ended%20up%20plumping%20for%20one%20of%20my%20oldest%20favourites%20for%20the%20main%20course:%20pulled%20and%20devilled%20chicken.%20This%20is%20simplicity%20itself%20to%20make,%20and,%20says%20Jane,%20%E2%80%9Cthere%20is%20no%20better%20way%20of%20using%20up%20the%20Christmas%20turkey%20with%20the%20glory%20it%20deserves.%E2%80%9D%20You%20can%20use%20any%20poultry%20though,%20including%20pheasant,%20chicken,%20or%20guineafowl.%20You%20basically%20separate%20the%20leg%20and%20breast%20meat,%20tearing%20it%20into%20rough%20quills.%20The%20leg%20meats%20is%20spread%20with%20devil%20sauce,%20left%20to%20marinate,%20then%20grilled,%20while%20the%20breast%20is%20heated%20through%20in%20a%20thin,%20creamy%20sauce%20flavoured%20with%20lemon.%20The%20two%20are%20served%20together,%20with%20crispy%20toast.%20Don%E2%80%99t%20do%20vegetables%20with%20it,%20just%20serve%20a%20salad%20afterwards.%3C/p%3E%3Cp%3EFor%20the%20starter,%20I%20decided%20to%20make%20individual%20leek%20tarts,%20because%20I%20had%20some%20puff%20pastry%20that%20needed%20using%20up.%20%E2%80%9CI%E2%80%99ve%20lost%20my%20Michelin%20star!%E2%80%9D%20I%20wailed%20as%20I%20struggled%20to%20prise%20them%20out%20of%20the%20tart%20tins.%20They%20looked%20a%20bit%20of%20a%20mess%20on%20the%20plate,%20but%20they%20did%20taste%20good.%20I%20think%20if%20I%20made%20them%20again,%20I%20wouldn%E2%80%99t%20use%20a%20top%20crust,%20and%20I%E2%80%99d%20add%20more%20cheese%20(which%20was%20supposed%20to%20be%20Wensleydale%20or%20Lancashire,%20but%20hey,%20this%20is%20rural%20France%20%E2%80%94%20I%20had%20to%20use%20Gruy%C3%A8re).%3C/p%3E%3Cp%3EFor%20pudding,%20I%E2%80%99d%20have%20liked%20to%20make%20the%20gorgeous%20syllabub-topped%20trifle,%20but%20it%E2%80%99s%20just%20impossible%20to%20make%20syllabub%20with%20French%20UHT%20cream,%20as%20I%20have%20discovered%20to%20my%20cost.%20This%20book%20also%20has%20the%20original%20sticky%20toffee%20pudding,%20credited%20to%20Francis%20Coulson%20at%20Sharrow%20Bay.%20Then%20there%E2%80%99s%20the%20famous%20Sussex%20Pond%20pudding,%20heart-attack-on-a-plate%20stuff.%20In%20the%20end,%20I%20made%20Stuffed%20Monkey,%20which%20isn%E2%80%99t%20really%20a%20pudding,%20but%20I%20liked%20the%20name.%20It%E2%80%99s%20a%20very%20sugary,%20buttery%20pastry%20filled%20with%20chopped%20candied%20peel%20and%20ground%20almonds%20stirred%20into%20melted%20butter.%20As%20I%20slid%20it%20into%20the%20oven%20I%20realised%20the%20filling%20was%20supposed%20to%20have%20an%20egg%20yolk%20in%20it%20too.%20Oops.%20No%20wonder%20it%20wasn%E2%80%99t%20very%20spreadable.%20Still,%20the%20recipe%20worked%20despite%20this,%20a%20crisp%20browned%20crust%20surrounding%20a%20crumbly%20filling.%20It%E2%80%99s%20very%20rich%20even%20without%20the%20egg,%20so%20you%20only%20need%20small%20pieces%20served%20with%20coffee;%20the%20peel%20and%20almonds%20give%20it%20a%20Christmassy%20flavour.%20Although%20actually%20it%E2%80%99s%20a%20Jewish%20recipe,%20credited%20to%20Florence%20Greenberg.%3C/p%3E%3Cp%3EStuffed%20Monkey%3C/p%3E%3Cp%3EPastry:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190C.%20For%20the%20pastry,%20rub%20together%20the%20butter%20and%20flour.%20Stir%20in%20the%20sugar%20and%20then%20the%20lightly%20beaten%20egg%20yolk.%20Bring%20the%20mixture%20together%20with%20your%20hands%20as%20best%20you%20can.%20%E2%80%9CRoll%20it%20out%20and%20cut%20two%20rounds%20to%20fit%20into%20an%208%E2%80%B3%20sandwich%20tin%E2%80%9D%20instructs%20Jane.%20It%20was%20nearly%20impossible%20to%20roll%20out,%20so%20I%20pressed%20half%20of%20it%20into%20the%20bottom%20of%20a%20loose-based%20flan%20tin,%20using%20wet%20hands.%20For%20the%20filling,%20just%20mix%20the%20melted%20butter%20with%20the%20rest%20of%20the%20ingredients%20(preferably%20including%20the%20egg%20yolk!)%20and%20spread%20over%20the%20base.%20Use%20your%20hands,%20a%20rolling%20pin,%20or%20anything%20else%20you%20can%20think%20of%20to%20pat%20out%20the%20rest%20of%20the%20pastry;%20if%20it%20falls%20apart,%20just%20put%20the%20bits%20on%20top%20of%20the%20filling%20and%20press%20them%20together%20to%20make%20a%20lid.%20Brush%20the%20top%20with%20egg%20white.%3C/p%3E%3Cp%3EPut%20in%20the%20oven%20for%2030%20minutes;%20cool%20in%20the%20tin.%20Using%20a%20loose-based%20tin%20did%20mean%20it%20was%20very%20easy%20to%20get%20it%20out%20of%20the%20tin.%20Cut%20into%20small%20slices%20and%20serve%20with%20tea%20or%20coffee%20(though%20I%20fancy%20a%20glass%20of%20Muscat%20or%20ginger%20wine%20wouldn%E2%80%99t%20go%20amiss%20either).%20It%20is%20said%20to%20keep%20well
