These muffins are light, moist and good served for breakfast or as bread accompanying a meal of “comfort” food. They store well in ziplock bags in the refrigerator and are convenient for a quick breakfast. Take one out, pop it in the microwave for 15-25 seconds and voila! Breakfast! Yield: 10 extra large size or 18 standard size muffins

  1. Preheat the oven to 425°F. Grease muffin pans and set aside.
  2. Stir vinegar into milk and set aside.
  3. Place brown sugar and granulated sugar into a large bowl and stir together, mashing up any lumps. Whisk in the flours, bran, rolled oats, baking powder, baking soda, salt, cinnamon, nutmeg and cloves to combine and set aside.
  4. In a separate bowl stir together the egg, cooking oil, vanilla, and milk and vinegar mixture. Pour over the dry ingredients and lightly stir in. Don’t over mix. Fold in the chopped apples.
  5. Divide the batter evenly among the prepared muffin cups.
  6. For Extra-Large Size: bake for 10 minutes, turn the heat down to 375°F, and bake for an additional 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. For Standard Size: Baking time will be less. Test for doneness.
  8. Cool the muffins for 5 minutes in the pan, then turn them out onto a wire rack to cool completely.
