This is the perfect autumn muffin, but just as good in winter, too. The muffins are moist with just the right amount of spice. I'm almost addicted to them! Great for breakfast or brunch, or as a snack. Cake couldn't taste any better than these.

  • 2½ cups flour
  • 1½ cups sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup canned pumpkin
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 cups peeled, finely chopped raw apple
  • ¾ cup chopped nuts
  • STREUSEL TOPPING:
  • In a small bowl combine 2 tablespoons flour, ¼ cup sugar and ½ teaspoon cinnamon. Cut in 1½ tablespoons butter until mixture is crumbly.

Direcciones

  1. In a large bowl combine flour, sugar, pumpkin pie spice, baking soda and salt; set aside. In a medium bowl combine eggs, pumpkin, milk and oil. Add liquid ingredients to dry ingredients, stirring until moistened. Stir in chopped apples. Spoon into muffin cups. Sprinkle streusel topping on top of each. Bake at 350° F., 20-25 minutes, or until done.
