- 4 egg yolks
- 2 1/2 cups (240 g) hazelnut flour
- 1 1/4 cups (120 g) almond flour
- 3 tablespoons (30 g) cornstarch
- 1/2 teaspoon (2 g) ground Ceylon cinnamon
- 1/2 teaspoon (2 g) ground green cardamom
- 1/2 teaspoon (2 g) ground cloves
- 1 1/4 cups (250 g) granulated sugar
- 1 tablespoon (12 g) vanilla bean paste
- Grated zest of 1 orange
- Grated zest of 1 lemon
- Mascarpone Chantilly (recipe follows)
- Orange supremes or segments (optional)
- 2/3 cup (150 g) mascarpone
- 1/2 (120 g) cup heavy cream
- Heaping 1 tablespoon (15 g) granulated sugar
- 2 teaspoons cognac
- 1 tablespoon (20 g) orange marmalade
