  1. 1. Sieve flour, salt, sugar and dry yeast into a large bowl. Add in the extra virgin olive oil to the hot water and mix this into the flour and form a dough. Knead till shiny. This bread does not require a lot of kneading (contrary to popular belief).
  2. 2. Put the dough in a lightly oil bowl, and cover with a clean tea towel. Put the dough in a hot place to rise till it has doubled in bulk - approximately 40 - 60 min.
  3. 3. When the dough has risen, divide into two halves. To one half add in 85g of grated cheddar cheese and one medium sized onion, finely minced. Mix well into the dough and shape into an oval.
  4. 4. To the other half of the dough add in 1 Tbsp. of parsley, 1 Tbsp. of rosemary and 1 Tbsp. of thyme. Top both loaves with finely sliced onion and sprinkle with sea salt.
  5. 5. Leave the two loaves to rise for a further 40 min. Meanwhile preheat the oven to Gas Mark 8 / 220 c / 450 f. When dough has risen, place each loaf on a greased baking tray. Bake for 10 min then spray with water, and bake for a further 20 - 25 min till golden.
  6. 6. Remove from the oven and cold on wire racks, serve hot or possibly cool
