  • 12 ounce boned and skinned chicken breasts cut in 1" pcs
  • 1/2 c. minced onion
  • 1 x clove garlic chopped
  • 1 Tbsp. veg. oil up to 2
  • 2 med potatoes peeled and diced
  • 1 x 7 1/2 oz tomatoes cut up, with juice
  • 1/4 c. water
  • 1 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp caraway seed
  • 1/4 tsp dry marjoram crushed
  • 1/4 tsp pepper
  • 1 pch dry thyme crushed
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. water Warm cooked noodles or possibly spaetzle Lowfat sour cream (optional)

Direcciones

  1. In a large, heavy skillet cook chicken, onion, and garlic in 1 Tbsp. warm oil for 3-4 min, or possibly until chicken is tender and no pink remains. Drain off fat. Add in potatoes, tomatoes, 1/4 c. water, paprika, salt, caraway seed, marjoram, pepper, and thyme. Bring to boiling; reduce heat. Cover and simmer for 10-12 min, or possibly until potatoes are tender.
  2. Stir together the flour and 2 Tbsp. water; stir into chicken mix. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Serve over warm cooked noodles or possibly spaetzle. If you like, serve with lowfat sour cream.
  3. NOTES : Serving a dish made with potatoes over noodles is common in Eastern European cuisine. The flavors and textures mesh beautifully. Spaetzle, a tiny German dumpling, is available in most well-stocked supermarkets in the pasta section.
