  1. Place a wok over medium-high heat and add 1 tablespoon oil, carrot, onion and zucchini and stir-fry for 1–2 minutes until the vegetables are tender. Remove the vegetables and set aside.
  2. Return the wok to the heat, add the remaining oil and the garlic and cook for 15 seconds.
  3. Add the chilis and cook for a further 30 seconds, stirring continuously.
  4. Increase the heat to high, add the calamari and cook for 2–3 minutes until just cooked.
  5. Return the vegetables to the wok with the soy sauce, sugar and sesame oil.
  6. Toss for a further 30 seconds until the vegetables are heated through.
  7. Stir through the spring onions and season to taste. Serve with steamed rice.
