  • 8 ounce uncooked thin mostaccioli
  • 1 lb grnd turkey breast
  • 2/3 c. bottled medium or possibly mild salsa
  • 1 pkt frzn corn - (10 ounce) thawed, liquid removed
  • 1 ct low-fat cottage cheese - (16 ounce)
  • 1 x egg
  • 1 Tbsp. chopped fresh cilantro
  • 1/2 tsp freshly-grnd white pepper
  • 1/4 tsp grnd cumin
  • 1/2 c. shredded Monterey Jack cheese - (2 ounce)

Direcciones

  1. Cook pasta according to package directions, omitting salt. Drain and rinse well; set aside.
  2. Spray large nonstick skillet with nonstick cooking spray. Add in turkey; cook till no longer pink, about 5 min. Stir in salsa and corn. Remove from heat.
  3. Preheat oven to 350 degrees.
  4. Combine cottage cheese, egg, cilantro, white pepper and cumin in small bowl.
  5. Spoon 1/2 turkey mix in bottom of 11- by 7-inch baking dish. Top with pasta. Spoon cottage cheese mix over pasta. Top with remaining turkey mix. Sprinkle Monterey Jack cheese over casserole.
  6. Bake 25 to 30 min or possibly till heated through.
  7. This recipe yields 6 servings.
