  1. Cut fish into 3 cm squares. Combine marinade ingredients in a bowl, add in fish and marinate 2 hrs.
  2. Cut onion and capsicum into 2 cm squares.
  3. Thread onto metal skewers, alternating fish with onion and capsicum.
  4. Oil a tray and lay fish on top. Moisten fish with marinade.
  5. Grill on BBQ or possibly cook under a warm grill, turning and brushing with marinade till cooked through (about 6 min).
  6. Serve on a bed of rice pilaf and glaze with hollandaise sauce.
