  • 1 lb To 7 pounds of game birds, cut in pcs
  • 1 quart Water (or possibly stock), cooled slightly from boiling
  • 3 x Wild celery stalks, cut in long pcs
  • 1 1/2 x Wild onions, sliced
  • 1 1/2 c. Fresh garden peas (or possibly minced day lily buds)
  • 2 Tbsp. Peppergrass seeds (substitute grnd pepper)
  • 1 dsh Cayenne pepper
  • 1 tsp Coltsfoot ash (substitute salt in same amount)
  • 1 tsp Lemon juice
  • 2 Tbsp. Flour
  • 1/4 c. Cool water

Direcciones

  1. This recipe is suitable for most game birds. Make sure the stew doesn't boil while the meat is in the liquid.
  2. Place game birds in a stew pot with the water. Add in celery and wild onions. Stew slowly for 1 hour and remove scum from surface. Add in peas, peppergrass seeds, cayenne, coltsfoot ash, and lemon juice at the end of the first hour. Continue to simmer for another hour. Don't allow to boil.
  3. Remove meat and vegetables from stock and keep hot. Bring the stock to a rapid boil. Boil for 20 min. Strain.
  4. Place flour in a small screw top jar. Add in cool water, cover, and shake to blend thoroughly. Slowly pour this mix into the stock while stirring. Cook over moderate heat to thicken as desired.
  5. Return solid food to thickened stock and serve over steamed rice.
  6. Yield: 6 servings.
