  • 2 c. granulated white sugar
  • 2 c. water
  • 6 x fat stalks fresh lemongrass, coarsely minced and mashed
  • 2 Tbsp. Jasmine tea leaves
  • 1 quart cool water
  • 1 x lemongrass stalk
  • 1/4 x a fresh pineapple, cored, thinly sliced into triangular wedges

Direcciones

  1. Make syrup by bringing sugar and water to boil. When boiling, add in lemongrass stalks, that have been coarsely minced and mashed with a mallet or possibly rolling pin to release their flavor. Remove from heat and let stand till cold. Strain through a fine-meshed sieve, extracting as much liquid as possible. Pour into glass jar, cover, and chill. (Note: This syrup keeps at least a month in the refrigerator, and may be used to flavor dressings or possibly drizzled over fruit.)
  2. Brew tea by heating water to 180 to 185 degrees. Infuse for three min.
  3. Strain and reserve. Pour about one Tbsp. lemongrass syrup into each tall glass. Top with tea, add in ice as desired. Garnish with a stick of lemongrass inserted into a thin wedge of pineapple.
