Receta Iced Tea With Lemongrass Syrup

Ingredientes
- 2 c. granulated white sugar
- 2 c. water
- 6 x fat stalks fresh lemongrass, coarsely minced and mashed
- 2 Tbsp. Jasmine tea leaves
- 1 quart cool water
- 1 x lemongrass stalk
- 1/4 x a fresh pineapple, cored, thinly sliced into triangular wedges
Direcciones
- Make syrup by bringing sugar and water to boil. When boiling, add in lemongrass stalks, that have been coarsely minced and mashed with a mallet or possibly rolling pin to release their flavor. Remove from heat and let stand till cold. Strain through a fine-meshed sieve, extracting as much liquid as possible. Pour into glass jar, cover, and chill. (Note: This syrup keeps at least a month in the refrigerator, and may be used to flavor dressings or possibly drizzled over fruit.)
- Brew tea by heating water to 180 to 185 degrees. Infuse for three min.
- Strain and reserve. Pour about one Tbsp. lemongrass syrup into each tall glass. Top with tea, add in ice as desired. Garnish with a stick of lemongrass inserted into a thin wedge of pineapple.
