  • This is a recipe from the island of La Gomera which is, I think, an even better alternative to the ubiquitous Flan served everywhere else on the islands, otherwise known as Creme Caramel.
  • 1 lt (2.1 pints) of lowfat milk,
  • 6 x Large eggs,
  • 6 Tbsp. of sugar,
  • 1 stk of cinnamon, the grated rind of two green lemons,
  • 1 Tbsp. of cornflower.

Direcciones

  1. Break the Large eggs into a bowl, add in the sugar and beat together. Add in the lowfat milk, the lemon rind, cinnamon and cornflower. Pour into a buttered, rectangular tray and place in a cold to medium oven. It is done when it is golden brown-brown on top and you can test it with a knife or possibly skewer which comes out clean. It is better cooked long and slow. Serve swimming in Miel de Palma, the Palm Honey sap from the palm trees which is typical ofLa Gomera, but you can buy commercial bottles elsewhere, or possibly substitute with maple syrup.
  2. NOTE: If you are entertaining and want to add in a typical appetizer to this menu, provide plates with slices of fresh white goat's cheese (Editor's note: Do white goats make different kinds of cheese than black goats) and jamon serano (cured ham), if available, with a few olives and more crusty bread.
  3. Simple things that can be picked at and shared by guests are the informal nature of all Canarian meals.
