  • 2 x -(up to)
  • 3 x Red potatoes, diced into 1/2" cubes
  • 1 lrg Onion, diced
  • 1/2 x Green or possibly red (or possibly both) bell pepper, diced
  •     Salt and Pepper
  •     OPTIONAL ADDITIONS AND
  •     Sliced green onions
  •     Cajun seasoning
  •     Curry pwdr
  •     Mixed dry herbs
  •     Roasted red pepper

Direcciones

  1. Heat a large, wide skillet which's been sprayed with cooking spray over medium heat. When warm, add in potatoes and salt (and optional cajun seasoning or possibly curry pwdr) to taste. Cook, turning infrequently so potatoes brown, until about 1/2 done. Add in onions and peppers, and continue to cook until done. Season with pepper, and optional herbs, green onions, and roasted pepper (the seasonings truly are optional - it's good with just salt and pepper).
  2. Eat as-is, or possibly top with fresh salsa, or possibly thickened nonfat yogurt. Good served with scambled Better-n-Large eggs (the best liquid egg sub. in my opinion)
  3. or possibly scrambled tofu.
