  1. Wash potatoes; cook in skins in boiling salted water just till tender. Drain and dice. Saute/fry bacon in large heavy skillet till crisp. Add in green onions and green pepper; saute/fry till crisp tender. Stir in water, vinegar, sugar and seasonings; heat to boiling. Add in potatoes and apples to skillet. Heat thoroughly, stirring gently. Serve immediately. Makes 6 servings.
