Ingredientes

  • 8 c. Chicken stock 2 L
  • 2 piece fresh ginger root, bruised 2
  • 1/4 c. Rice wine, (mirin) or possibly sake 50 mL
  • 1/4 c. Soy sauce 50 mL
  • 1 lb Soba noodles, (or possibly udon or possibly spaghetti) 500 g
  • 1 lb Boneless, skinless chicken breasts, cut into 1"/2.5 cm chunks 500 g
  • 10 ounce Spinach, (approx.), trimmed and minced 300 g
  • 1 c. Frzn peas 250 mL
  • 2 x Carrots, grated 2
  • 8 x Green onions, roughly minced 8

Direcciones

  1. Place stock, ginger, rice wine (mirin) and soy sauce in a large saucepan or possibly Dutch oven. Bring to a boil and then simmer gently 10 min.
  2. Meanwhile, cook noodles in boiling water till almost tender. Rinse with cool water. Drain well.
  3. Add in chicken to stock mix. Cook a few min.
  4. Add in spinach, peas, carrots, green onions and noodles. Heat thoroughly.
  5. Taste and adjust seasoning if necessary.
  6. NOTES : Makes 4 servings
