%20and%20Smith%20was%20bringing%20mojitos%20and%20I%20wanted%20to%20bring%20an%20appetizer%20that%20would%20go%20well%20-%20something%20spicy%20and%20salty%20and%20a%20little%20bit%20sweetish.%3C/p%3E%3Cp%3EI%20have%20to%20admit%20I%20never%20used%20to%20be%20much%20of%20a%20fig%20fan,%20unless%20they%20were%20surrounded%20in%20a%20soft%20cookie%20were%20titled%20%22Newton%22.%20%20When%20I%20was%20a%20kid,%20fig%20Newtons%20were%20my%20second%20favorite%20after%20school%20snack,%20following%20slightly%20stale%20and%20soft%20graham%20crackers%20dipped%20in%20milk%20until%20they%20fell%20apart.%20%20After%20which%20you%20quickly%20drink%20the%20milk%20before%20the%20crumbs%20hit%20the%20bottom%20of%20the%20glass.%20%20Mmmmm.%20%20But,%20oddly,%20tastes%20change%20even%20as%20adults.%20%20For%20instance,%20a%20year%20or%20so%20ago,%20I%20was%20out%20with%20my%20olive-despising%20friend%20Caroline%20-%20we%20hadn't%20seen%20each%20other%20in%20a%20while%20-%20so%20when%20she%20ordered%20the%20hummus/warm%20olive%20appetizer%20I%20almost%20fell%20off%20my%20chair.%20%20I%20felt%20I%20didn't%20know%20who%20she%20WAS%20anymore%20-%20you%20know?%20%20We've%20known%20each%20other%20since%20the%20late%20'80's%20and%20in%20all%20that%20time,%20I%20never%20once%20saw%20her%20eat%20an%20olive,%20mostly%20saw%20her%20gag%20in%20the%20vicinity%20of%20olives,%20yet%20suddenly%20there%20she%20was%20slurping%20them%20down.%20%20And%20so%20it%20is%20with%20me%20and%20figs.%20%20Where%20the%20raw%20fruit%20once%20kind%20of%20skeeved%20me%20out%20(perhaps%20because%20of%20a%20music%20video%20involving%20plates%20of%20fruit%20greasy%20haired%20men%20and%20women%20in%20leather%20that%20MTV%20played%20incessantly%20my%20freshman%20year%20of%20college...),%20now,%20I%20love%20them,%20especially%20warm%20from%20the%20grill%20or%20the%20broiler.%20%20They%20are%20fantastic.%20%20So,%20for%20dessert,%20make%20them%20Marc's%20way%20(delicious!),%20but%20for%20an%20appetizer,%20follow%20my%20little%20recipe%20here,%20because%20they%20were%20simply%20and%20just%20sublime:%3C/p%3E%3Cp%3EFirst,%20haul%20out%20your%20cast%20iron,%20or%20stainless%20steel%20skillet,%20heat%20it%20up%20and%20toss%20in%20your%20bacon.%20%20Cook%20until%20crispy%20then%20take%20it%20out%20and%20let%20it%20drain%20on%20some%20paper%20towels.%20%20Pour%20out%20all%20but%20a%20tablespoon%20or%20so%20of%20bacon%20fat%20out%20of%20the%20pan,%20reheat,%20and%20put%20in%20the%20figs,%20cut%20side%20down.%20%20Cook%20over%20medium%20heat%20until%20just%20fragrant.%20%20Meanwhile%20preheat%20the%20broiler%20(I%20use%20my%20toaster%20oven%20broiler%20because%20it%20doesn't%20take%20a%20lifetime%20to%20hit%20500%20degrees).%20%20Place%20your%20figs%20on%20a%20cookie%20sheet%20covered%20in%20parchment,%20spoon%20a%20little%20ricotta%20in%20the%20center%20of%20each%20fig,%20hit%20each%20ricotta%20filled%20fig%20with%20a%20dash%20of%20hot%20sauce%20and%20a%20tiny%20pinch%20of%20sea%20salt,%20then%20place%20the%20sheet%20into%20the%20broiler%20and%20broil%20until%20the%20ricotta%20turns%20a%20nice%20golden%20color.%20%20Just%20before%20serving%20place%20small%20piece%20of%20bacon%20on%20top.%20%20Serve%20immediately.%3C/p%3E){kind=link}
