- 2 or more cloves of garlic
- 1/2 t.. Mexican oregano
- 2 T. olive oil
- 2 T. flour
- Veggie Enchiladas with Homemade Red Chili Sauce
- 2 T. olive oil
- 1 medium Vidalia onion, chopped
- 2 cloves garlic minced
- 1 T. brown sugar
- 1 small sweet potato, diced in 1 â cubes
- 1/8 to 1/4 t. chili powder
- 1 can black beans, drained and rinsed
- 1 pkg. â1/3 less fatâ cream cheese
- 1 packed cup baby spinach leaves
- Red Chili Sauce (See recipe above.)
- 8 corn or flour tortillas
- 1/2 c. Monterey-Jack Cheese, shredded

,%20my%20husband%20came%20home%20wagging%20a%20one%20pound%20bag%20of%20dried%20peppers%20from%20New%20Mexico.%20%20%20I%20was%20ecstatic!%20%20%20%20The%20%E2%80%9CSpirit%20of%20Return%20to%20Santa%20Fe%20for%20Christmas%20Future%E2%80%9D%20is%20definitely%20sending%20us%20signs.%3C/p%3E%3Cp%3EThese%20peppers%20came%20from%20Sweet%20Freedom%20Farms.%20%20%20One%20of%20hubby%E2%80%99s%20co-workers%20had%20received%20two%20bags%20for%20Christmas%20and%20graciously%20sent%20one%20our%20way.%20%20%20I%20had%20actually%20ordered%20some%20dried%20guajillo%20peppers%20from%20them%20a%20couple%20of%20years%20ago.%20%20%20They%20were%20so%20nice;%20they%20threw%20in%20some%20dried%20Mexican%20oregano%20for%20free!%3C/p%3E%3Cp%3EWhat%20could%20I%20do%20with%20all%20these%20dried%20peppers?%3C/p%3E%3Cp%3EI%20immediately%20began%20searching%20for%20recipes%20and%20my%20mind%20started%20racing.%3C/p%3E%3Cp%3EThere%20is%20a%20great%20restaurant%20in%20downtown%20Tulsa,%20Elote.%20%20%20%20Elote%20is%20all%20about%20fresh%20and%20local%20and%20it%20shows%20in%20their%20food.%20%20%20They%20have%20the%20best%20Veggie%20Burrito%20(black%20beans,%20sweet%20potatoes,%20spinach,%20caramelized%20onions,%20and%20cheese%20in%20a%20whole%20wheat%20or%20flour%20tortilla%20topped%20with%20white%20queso).%20%20%20%20I%20decided%20to%20take%20that%20burrito%20for%20inspiration,%20cross%20it%20with%20a%20spinach%20enchilada%20recipe%20I%20had,%20top%20it%20with%20homemade%20red%20chili%20sauce%20and%20see%20what%20in%20the%20world%20I%20came%20up%20with!%20%20(And%20if%20you%20go%20to%20Elote%E2%80%99s%20website,%20make%20sure%20you%20check%20out%20the%20luchadore%20section!%20%20)%3C/p%3E%3Cp%3EI%20took%20the%20chili%20sauce%20recipe%20almost%20verbatim%20from%20the%20Sweet%20Freedom%20Farms%20recipe%20for%20Basic%20Red%20Chile.%20%20%20%20There%20they%20state%20that:%3C/p%3E%3Cp%3EThis%20sauce%20is%20used%20in%20many%20different%20New%20Mexican/Mexican%20recipes,%20and%20can%20also%20be%20used%20over,%20under,%20and%20between%20anything%20else.%20Red%20chili%20is%20especially%20good%20with%20pork%20dishes.%3C/p%3E%3Cp%3EOne%20pound%20is%20a%20lot%20of%20dried%20chilies.%3C/p%3E%3Cp%3EMake%20the%20chili%20sauce%20first.%3C/p%3E%3Cp%3EBasic%20Red%20Chili%20Sauce%3C/p%3E%3Cp%3E12%20dried,%20red%20New%20Mexico%20chile%20pods,%20of%20the%20desired%20heat%20level%3C/p%3E%3Cp%3E4%20c.%20water%3C/p%3E%3Cp%3E1/2%20t.%20%20sea%20salt%3C/p%3E%3Cp%3E2%20or%20more%20cloves%20of%20garlic%3C/p%3E%3Cp%3E1/2%20t..%20Mexican%20oregano%3C/p%3E%3Cp%3E2%20T.%20%20olive%20oil%3C/p%3E%3Cp%3E2%20T.%20%20flour%3C/p%3E%3Cp%3ERemove%20stems%20and%20seeds%20from%20chilies%20and%20rinse%20the%20pods.%3C/p%3E%3Cp%3ERinse%20well%20as%20you%20de-seed.%3C/p%3E%3Cp%3ESoak%20the%20pods%20in%20warmish%20water%20for%20about%203%20minutes%20or%20until%20soft,%20then%20rinse%20again%20removing%20any%20remaining%20seeds%20and%20veins.%3C/p%3E%3Cp%3ERinse%20while%20you%20check%20for%20more%20seeds%20and%20de-vein.%20Use%20a%20small%20paring%20knife%20to%20help%20remove%20any%20membranes.%3C/p%3E%3Cp%3EPut%20the%20chile%20pods%20into%20a%20saucepan,%20and%20cover%20with%20the%204%20cups%20of%20water.%20%20Bring%20to%20a%20boil,%20cover,%20and%20let%20simmer%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20pods%20to%20a%20blender%20or%20food%20processor,%20along%20with%202%20cups%20of%20the%20cooking%20water.%20%20Add%20the%20salt,%20garlic%20and%20oregano,%20and%20process%20the%20chilies%20until%20smooth.%3C/p%3E%3Cp%3EI%20found%20it%20impossible%20to%20whisk%20and%20take%20a%20pic;%20therefore,%20my%20whisk%20is%20laying%20at%20the%20bottom%20of%20the%20skillet.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20skillet%20on%20medium%20heat.%20%20Add%20the%20flour%20and%20whisk%20to%20make%20a%20roux.%20%20Remove%20from%20heat%20and%20add%20the%20blended%20chilies%20to%20the%20roux,%20stirring%20well,%20and%20making%20sure%20any%20lumps%20dissolve.%3C/p%3E%3Cp%3EGetting%20thick%20and%20bubbly.%3C/p%3E%3Cp%3EReturn%20to%20the%20heat%20and%20combine%20the%20remaining%20cooking%20%20liquid,%20slowly,%20into%20the%20chili,%20to%20achieve%20a%20tomato%20sauce%20kind%20of%20consistency.%20Simmer%20for%20around%2010%20minutes.%20%20(Don%E2%80%99t%20worry.%20%20%20If%20you%20have%20lumps,%20place%20everything%20back%20in%20the%20blender.)%3C/p%3E%3Cp%3EMore%20water%20can%20be%20added%20for%20a%20thinner%20consistency,%20or%20for%20thicker%20sauce,%20use%20less%20water.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20skillet%20and%20saute%20onions%20for%205%20minutes.%20%20%20%20Add%20garlic%20and%20brown%20sugar,%20stir%20in%20well,%20and%20saute%20for%20another%205%20minutes.%20%20Onion%20mixture%20should%20be%20nice%20and%20golden.%20%20%20Set%20aside.%3C/p%3E%3Cp%3EThe%20brown%20sugar%20just%20helps%20the%20onions%20caramelize.%3C/p%3E%3Cp%3EPlace%20sweet%20potato%20cubes%20in%20a%20microwavable%20covered%20bowl.%20%20%20Microwave%20for%204-5%20minutes%20until%20done.%20%20%20Toss%20potatoes%20with%20the%20chili%20powder.%20%20%20Set%20aside.%3C/p%3E%3Cp%3EThis%20would%20also%20make%20a%20great%20side%20dish%20by%20itself.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%20drained%20black%20beans%20and%20cream%20cheese.%20%20%20%20Process%20until%20smooth.%20%20%20Set%20aside.%3C/p%3E%3Cp%3EThis%20would%20also%20make%20a%20nice%20meal.%20Seriously,%20just%20grab%20a%20spoon!%20(If%20you%20have%20any%20left%20over,%20use%20it%20as%20a%20dip.)%3C/p%3E%3Cp%3EChop%20spinach%20slightly.%20%20%20Set%20aside.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EAssemble%20enchiladas:%3C/p%3E%3Cp%3EThese%20are%20the%20best%20corn%20tortillas!%3C/p%3E%3Cp%3EHeat%20tortillas%20in%20microwave%20for%20about%2020%20seconds%20so%20they%20are%20pliable.%20%20%20Place%20one%20cup%20of%20chili%20sauce%20in%20the%20bottom%20of%20baking%20pan.%20%20%20Take%20one%20tortilla,%20spread%20the%20bean%20mixture%20down%20the%20center,%20top%20with%20onions,%20a%20few%20sweet%20potato%20cubes%20and%20spinach.%3C/p%3E%3Cp%3EI%20like%20to%20add%20raw%20spinach%20on%20top%20here.%20You%20may%20cook%20yours%20if%20you%20like.%3C/p%3E%3Cp%3ERoll%20up%20and%20place%20in%20baking%20pan.%20%20%20Continue%20until%20all%20tortillas%20are%20used.%20%20%20Cover%20with%20sauce%20and%20top%20with%20cheese.%3C/p%3E%3Cp%3ECover%20with%20the%20rest%20of%20the%20red%20sauce.%3C/p%3E%3Cp%3EPlace%20in%20oven%20and%20bake%20until%20bubbly%20and%20cheese%20is%20melted,%20about%2040%20minutes.%3C/p%3E%3Cp%3EVeggie%20enchiladas%20in%20my%20new%20favorite%20baking%20dish!%3C/p%3E%3Cp%3EThe%20peppers%20that%20we%20received%20were%20HOT,%20but%20the%20sauce%20came%20out%20really%20good%20with%20just%20enough%20back%20heat.%20%20%20The%20enchiladas%20were%20good%20but%20there%20was%20just%20something%20missing.%20%20%20Next%20time,%20%20I%20will%20add%20more%20caramelized%20onions%20%20as%20well%20as%20some%20cilantro%20to%20the%20roll%20up.%3C/p%3E%3Cp%3EAhhh,%20New%20Mexico%E2%80%A6.what%20will%20be%20our%20next%20sign%20to%20return?%3C/p%3E%3Cp%3EAnd%20remember,%20if%20you%20need%20a%20smile%20today,%20don%E2%80%99t%20forget%20to%20check%20out%20the%20%20luchadore%20section%20of%20Elote%E2%80%99s%20site.%20%20%20HILARIOUS!%3C/p%3E){kind=link}
