- Yeast Dough
- 1 oz fresh yeast of 1 envelope fast action-dried yeast
- a pinch of sugar
- 3 3/4 cups of all purpose flour plus extra for dusting
- 2 egg yolks
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- Walnut Butter
- 11 tablespoons butter, softened
- 2/3 cup demerara sugar, plus extra for diving
- finely grated zest of 1 unwaxed lemon
- 1/2 cup walnuts, chopped
