Ingredientes

  • Sticky Grape and Walnut Flatbread (from The Flavors of Tuscany by Maxine Clark)
  • 8 oz. black grapes, seeded (Sangiovese wine grapes, if possible, or, like we had on hand, Catawba grapes)
  • jelly roll pan
  • Yeast Dough
  • 1 oz fresh yeast of 1 envelope fast action-dried yeast
  • a pinch of sugar
  • 3 3/4 cups of all purpose flour plus extra for dusting
  • 2 egg yolks
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • Walnut Butter
  • 11 tablespoons butter, softened
  • 2/3 cup demerara sugar, plus extra for diving
  • finely grated zest of 1 unwaxed lemon
  • 1/2 cup walnuts, chopped
