  • Extra virgin olive oil
  • 1 lb Grnd round beef
  • 1 c. Green pepper, diced
  • 1/2 c. Celery, diced
  • 1 med Onion, minced
  • 1 lrg Clove garlic, chopped
  • 1/2 c. Black olives (extra large), minced
  • 1 can 15 oz kidney beans
  • 1 can 11 oz stewed tomatoes
  • 2 Tbsp. Brown sugar
  • 1 Tbsp. Chili pwdr
  • 1 Tbsp. Cumin
  • 1 x Chili pepper, chopped
  • 2 Tbsp. Oregano vinegar
  • 1 c. Water

Direcciones

  1. 1. Saute/fry grnd round in a little extra virgin olive oil, drain, set aside. Saute/fry bell peppers, diced celery, onion, garlic until tender. Add in remaining ingredients, except the c. of water.
  2. 2. Let simmer for approximately 15 min, add in water and continue to simmer another 15 min. (Can adjust amount of water to whatever consistency preferred.
  3. NOTE: The oregano vinegar is made by steeping fresh oregano in white vinegar for at least 10 days, longer is better.
  4. NOTE: Chili Pepper; From a can of Chiles Chipotles Adobados plus 1 Tbsp. sauce.
