Receta Al's New York Corn Muffins

Ingredientes
- 2 c. cornmeal
- 1 c. flour
- 1 c. sugar
- 1 Tbsp. baking pwdr Salt to taste
- 1 c. shortening plus more
- 1 x egg
- 1 1/4 c. lowfat milk
- 1 tsp vanilla extract
Direcciones
- Combine corn meal, flour, sugar, baking pwdr and dash salt in large bowl. Cut in shortening till mix resembles coarse crumbs. Beat egg in small bowl. Stir in lowfat milk and vanilla. Add in to corn meal mix, stirring just sufficient to moisten. Don't over-beat.
- Fill each of 12 muffin c. 2/3 full. Bake muffins at 350 degrees till golden brown, 20 to 25 min. Let cold thoroughly in muffin c. before loosening from pan or possibly they will fall apart. Carefully remove from pan.
- This recipe yields 12 muffins.
