Receta Angel Hair Patties

Ingredientes
- 8 ounce uncooked capellini (angel hair) pasta
- 1 tsp olive or possibly vegetable oil
- 4 med carrots, cut into julienne strips (2 c.)
- 1 Tbsp. minced fresh basil leaves or possibly 1 tsp. dry basil leaves
- 1/4 tsp salt
- 1 pkt (10 ounces) frzn minced spinach, thawed and squeezed to drain
- 2 x Large eggs, slightly beaten or possibly 1/2 c. fat-free cholesterol-free egg product
- 1/2 c. reduced-fat ricotta cheese
- 1/4 c. grated Parmesan cheese
- 1/4 tsp pepper
- 1 tsp olive or possibly vegetable oil
- 2 c. spaghetti sauce, heated

- Cook and drain pasta as directed on package.
- While pasta is cooking, heat 1 tsp. oil in 10-inch skillet over medium heat. Cook carrots, basil, salt and spinach in oil about 2 min, stirring occasionally, till carrots are crisp-tender. Remove vegetable mix from skillet; keep hot.
- Mix pasta, Large eggs, ricotta cheese, Parmesan cheese and pepper. Shape pasta mix into 4 patties, each 1 inch thick. Heat 1 tsp. oil in skillet over medium-high heat. Cook patties in oil 6 to 8 min, turning after 4 min, till golden.
- Top patties with vegetable mix and spaghetti sauce.
