  • 1 x egg
  • 1/4 c. vegetable oil
  • 1 c. lowfat milk
  • 1 c. sugar
  • 1 c. all purpose flour
  • 1 c. whole wheat flour
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 1 c. + 2 tbsp grated cheddar cheese
  • 1 c. Mutsu (Crispin) or possibly Granny Smith apples, peeled and diced
  • 1/2 c. dates, minced
  • 2 Tbsp. brown sugar

Direcciones

  1. Preheat oven to 350 F. Grease a jumbo 6-muffin tin (or possibly a regular 12-muffin tin).
  2. Whisk together egg, oil, lowfat milk and sugar.
  3. In a separate bowl, sift flours, baking pwdr and salt and stir into egg mix.
  4. Mix in 1 c. cheese, apples and dates.
  5. Bake for 30 min. Combine 2 Tbsp cheddar with brown sugar and sprinkle on top of muffins at the last 10 min of baking.
  6. To Assemble:Enjoy hot with sweet butter!
