Receta Apple Hazelnut Cake

Ingredientes
- 3 x Large eggs
- 1/2 c. sugar (caster)
- 1 c. hazelnuts, grnd
- 1 x apples, Granny Smith
- 300 ml cream
- 1 Tbsp. brandy
- 1 Tbsp. icing sugar
Direcciones
- Separate Large eggs.
- Beat egg yolks and sugar in a small bowl with electric mixer till pale and thick. Transfer to a large bowl.
- Peel, core and grate the apple.
- Stir hazelnuts and apple into egg yolk mix.
- In a clean bowl, beat egg whites till soft peaks form, fold gently into hazelnut mix. Pour into greased and lined 20cm springform pan, bake in moderate oven for 30 min. Remove from tin and cold on a wire rack.
- Beat cream with brandy and sifted icing sugar till stiff, spread top and sides of cake with whipped cream. Decorate with crushed hazelnuts and grated chocolate if you like.
- When whipping egg whites, use a very clean bowl for good results.
