Receta Apple Walnut Salad

Ingredientes
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. low-sodium vegetable broth
- 1 1/2 Tbsp. vegetable oil
- 2 c. watercress tough stems removed
- 1 lrg carrot shredded
- 1 x red delicious apple cored, shredded
- 1 x golden brown delicious apple cored, shredded
- 2 Tbsp. fresh lemon juice
- 1/3 c. minced walnuts
Direcciones
- Make Dressing: In small bowl, mix lemon juice, broth and oil till blended. Season to taste with salt and freshly grnd pepper.
- Place watercress around outside edge of serving platter. Scatter carrots over watercress. In small bowl, toss shredded apples with lemon juice, then spoon into center of platter. Scatter nuts over apples. Pour dressing over salad and serve.
