%3C/p%3E%3Cp%3EI%20used%20dulche-de-leche%20that%20my%20husband%20bought%20from%20Argentina%20and%20it%20added%20such%20a%20nice%20depth%20of%20flavor%20to%20the%20dessert.%20Little%20goes%20a%20long%20way%20with%20this%20dish,%20so%20I%20prefer%20making%20it%20in%20small%20individual%20ramekins%20--%20for%20perfect%20portion%20control.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20here:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EKeep%204%206~7%20oz.%20ramekins%20ready.%3C/p%3E%3Cp%3EMake%20the%20Caramel:%20Combine%20sugar%20and%20water%20in%20a%20saucepan.%20Heat%20on%20medium%20flame%20swirling%20the%20pot%20once%20in%20a%20while%20until%20sugar%20melts%20and%20turns%20orange%20to%20amber%20color.**%20Immediately%20divide%20the%20caramel%20evenly%20among%20the%20ramekins.%20Let%20cool.%3C/p%3E%3Cp%3EMake%20the%20Custard:%20Preheat%20the%20oven%20325%C2%B0F.%20Combine%20cream,%20dulche%20de%20leche%20and%20salt%20in%20a%20saucepan.%20Stir%20until%20the%20mixture%20is%20smooth%20and%20starts%20to%20barely%20simmer%20--%20it%20should%20register%20160%C2%B0F%20on%20an%20instant%20read%20thermometer.%3C/p%3E%3Cp%3EIn%20the%20meantime%20whisk%20eggs%20in%20a%20bowl.%20Once%20the%20cream%20is%20hot%20enough,%20temper%20the%20eggs%20with%20the%20hot%20liquid.%20Slowly%20add%201~2%20ladleful%20of%20hot%20cream%20mixture%20into%20the%20eggs,%20while%20whisking%20constantly.%3C/p%3E%3Cp%3ENow%20add%20the%20egg%20mixture%20back%20into%20the%20saucepan%20while%20whisking%20constantly.%20Set%20aside.%3C/p%3E%3Cp%3ELine%20a%20roasting%20pan%20with%20a%20kitchen%20towel.%20Bring%20a%20big%20pot%20of%20water%20to%20boil.%20Pour%20the%20custard%20into%20the%20caramel%20lined%20ramekins.%20Place%20them%20in%20the%20roasting%20pan%20and%20pour%20the%20hot%20water%20so%20it%20reaches%20half%20way%20to%20the%20top%20of%20ramekins.%3C/p%3E%3Cp%3EBake%20for%2025~30%20minutes%20or%20until%20the%20custard%20is%20just%20set.%20Remove%20from%20the%20oven%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3ERefrigerate%20for%20at%20least%204%20hours%20or%20overnight.%20Run%20a%20sharp%20knife%20around%20the%20edge%20of%20the%20ramekin%20and%20invert%20it%20over%20the%20serving%20plate.%20Serve%20right%20away%20and%20Enjoy!!%3C/p%3E){kind=link}
