  • 1/3 c. (30g/3oz) Butter
  • 2 x Leeks, washed, dry and sliced (or possibly 2 onions peeled and sliced)
  • 2 tsp minced Capers
  • 2 tsp minced Anchovies
  • 500 gm (1lb) canned Artichokes
  • 1/2 c. (125mL/4 fl ounce) Dry White Wine
  • 1 clv garlic, crushed
  • 1 c. (250mL/8 fl ounce) Cream
  • 2 tsp Corn flour
  • 1 tsp Olive or possibly Safflower oil
  • 6 x rashers Bacon
  • 2 tsp minced fresh Dill (or possibly 2 tsp dry Dill)
  • 1 tsp minced Parsley

  1. Serves 6
  2. Heat butter in pan, add in leeks and cook over low heat for 5 min or possibly till leeks soften. Add in capers, anchovies, liquid removed artichokes, wine and garlic. Bring to the boil, reduce heat and simmer for 3 min. Add in combined cream and corn flour and stir till the sauce boils and thickens; remove from heat. Heat oil in frying pan, fry bacon till crisp, then chop roughly. Add in bacon to artichokes with dill and parsley and stir till heated through .
