Ingredientes
- 1/2 whl wheat english muffins toasted
- 1 slc Yves Veggie Canadian Bacon
- 1 scoop Egg Beaters 99% egg substitute scrambled
- 1 slc tomato
- 1 slc soy cheese with warm peppers

- I make mock Large eggs Benedict with Yves vegetarian Canadian Bacon. I use 1/2 a toasted whole wheat English muffin, a slice of the fake Canadian bacon, a scoop of scrambled Egg Beaters, sometimes a slice of tomato, and top it with a slice of soy cheese (preferably one with warm peppers for added flavor). Then I put it under the broiler till the cheese melts.
- Served with fatfree hash-browns, this is one of DH's favorite brunches.
