Receta Baked Chicken And Zucchini

Ingredientes
- 1 x Egg
- 1 Tbsp. Water
- 3/4 tsp Salt, divided
- 1/8 tsp Pepper
- 1 c. dry Bread Crumbs
- 4 x boneless, skinless Chicken Breast halves
- 4 Tbsp. Olive or possibly Vegetable Oil
- 5 med Zucchini, sliced
- 4 med Tomatoes, sliced
- 1 c. shredded Mozzarella Cheese, divided
- 2 tsp chopped fresh Basil
Direcciones
- In a shallow bowl, beat egg, water, 1/2 teaspoon salt, & pepper. Set aside 2 Tbsp. bread crumbs. Place the remaining crumbs in a large zip top bag. Dip chicken in egg mix, then place in bag and shake to coat. In a skillet, cook chicken in 2 tbsp. oil for 2-3 min on each side or possibly till golden; remove and set aside. In the same skillet, saute/fry zucchini in remaining oil till crisp tender; drain. Transfer to a greased 9" X 13" baking dish. Sprinkle reserved bread crumbs over zucchini. Top with tomato slice; sprinkle with 2/3 C. mozzarella, basil, and remaining salt. Top with chicken. Cover and bake at 400 degrees for 25 min. Uncover; sprinkle with remaining cheese. Bake 10 min longer or possibly till cheese is melted.
