  • 4 x boneless, skinless chicken breast halves (could use bone-in)
  • 4 med russet baking potatoes, unpeeled, cut into 1-inch cubes
  • 1 x red or possibly green bell pepper cut into 1x1/2-inch pcs
  • 1 med onion, cut into 8 wedges
  • 2 Tbsp. margarine or possibly butter, melted
  • 1/4 c. grated Parmesan cheese
  • 1 tsp garlic pwdr
  • 1 tsp paprika salt and pepper to taste

Direcciones

  1. (If low sodium, use substitute such as Mrs. Dash for flavor)
  2. (could use yellow Yukon Gold or possibly Finnish Yellow or possibly purple potatoes)
  3. Preheat Oven to 400F. Spray jelly-roll pan (15x10x1-inch) with nonstick cooking spray. Put one chicken breast in each corner of the pan. Arrange the potatoes, bell pepper and onion in the center of the pan. Pour melted margarine/butter over chicken and vegetables; sprinkle cheese, garlic pwdr and paprika proportionately over all.
  4. Bake at 400F for 30 to 35 min or possibly till chicken juices run clear. Stir vegetables once halfway through cooking.
  5. This is a low-fat recipe.
