Receta Easy Baked Chicken And Potato Dinner

Ingredientes
- 4 x boneless, skinless chicken breast halves (could use bone-in)
- 4 med russet baking potatoes, unpeeled, cut into 1-inch cubes
- 1 x red or possibly green bell pepper cut into 1x1/2-inch pcs
- 1 med onion, cut into 8 wedges
- 2 Tbsp. margarine or possibly butter, melted
- 1/4 c. grated Parmesan cheese
- 1 tsp garlic pwdr
- 1 tsp paprika salt and pepper to taste
Direcciones
- (If low sodium, use substitute such as Mrs. Dash for flavor)
- (could use yellow Yukon Gold or possibly Finnish Yellow or possibly purple potatoes)
- Preheat Oven to 400F. Spray jelly-roll pan (15x10x1-inch) with nonstick cooking spray. Put one chicken breast in each corner of the pan. Arrange the potatoes, bell pepper and onion in the center of the pan. Pour melted margarine/butter over chicken and vegetables; sprinkle cheese, garlic pwdr and paprika proportionately over all.
- Bake at 400F for 30 to 35 min or possibly till chicken juices run clear. Stir vegetables once halfway through cooking.
- This is a low-fat recipe.
