Receta Baked onion pakora (fritters)
Pakoras (fritters) are different vegetables that are dipped in a spiced batter and deepfried. This is usually served as a snack or an appetizer. I've made this healthier by baking the pakoras instead of deep frying it.
Ingredientes
- Onions - chopped - 2
- Chickpea flour (besan) - 2 TBSP
- Rice flour - 2 TBSP
- Chilli powder - 1/2 tsp
- Ajwain* seeds - 1/2 tsp
- Cilantro -chopped - 2TBSP
- Salt to taste
- Oil - 2TBSP
- If you cannot find ajwain, you can substitute dried thyme (1/4 tsp) or cumin seeds (1/2 tsp)

- Preheat oven to 425
- Mix the chickpea flour, rice flour, chilli powder, salt, cilantro, ajwain/thyme/cilantro in a bowl.
- Add the chopped onion
- Add the oil
- Mix well - the dry powders should coat the onion well.
- Continue mixing - the onion will release its juices and the mix should be slightly sticky (like mashed potatoes) - if not, add a few drops of water till you get a sticky mass
- Grease a cookie sheet
- Scoop out the onion mix with a spoon on to the cookie sheet (about walnut size) about an inch apart.
- Bake in the preheated oven for 15 minutes
- Flip the pakoras and continue baking for another 10 to 15 minutes till golden brown.
- The pakoras will be crispy on the outside and soft inside.
- You can sustitute grated raw potatoes, carrots, cauliflower and other similar vegetables instead of onions. If the vegetable does not yeild water (like cauliflower), add a few teaspoons of water to the mix so that it is a sticky mass and you can scoop it with a spoon.
