Receta Baked Sweet Potatoes With Sauteed Squash And Peppers

Ingredientes
- 1 x Zucchini
- 1 x Yellow squash
- 1 x Red pepper
- 1 Tbsp. Extra virgin olive oil
- 4 x Sweet potatoes,, baked Salt Pepper Lowfat sour cream
Direcciones
- Dice the zucchini, squash and red pepper. In large non-stick saute/fry pan, heat the extra virgin olive oil. Add in the diced vegetables. Slice sweet potatoes in half and scoop out some filling. Place vegetables in sweet potato shell. Season with salt and pepper. Serve with lowfat sour cream.
