Receta Barb's Less-Sugar, Less-Fat, More-Zucchini Muffins
I got this recipe from my local Mother's club. It's a great way to get your kids to eat more vegetables. My kids love them. I've also put cream cheese frosting on them and taken them to my daughter's preschool class for a party. (I have to admit, they are pretty good, even for adults).
Ingredientes
- 2 1/4 cups sifted all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup buttermilk
- 3 cups finely grated unpeeled zucchini (about 2 1/2 medium)
- 3/4 cup semisweet chocolate chips
Direcciones
- Mix the above ingredients. Bake at 375 degrees for 14-15 minutes. Test with toothpick to check doneness. Don't over bake, you want them moist in the middle but the top to spring back when lightly touching.
- I use muffin liners but you can also grease a muffin pan and make without liners.
