Receta Barb's Mom's Buttermilk Fried Chicken

Ingredientes
- 1/2 c. Bisquick Baking Mix
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp. Seasoning Salt
- 3 lb Broiler-Fryers cut into 8 pcs skinned and wing tips removed
- 2 Tbsp. Extra virgin olive oil
- 2 c. Buttermilk
- 3 x Large eggs

- In a large covered bowl, beat Large eggs gently. Add in buttermilk. Place chicken in mix, cover and chill for 2 hrs, turning chicken ever so often to proportionately coat.
- Preheat oven to 400 degrees. Line a 13 by 9 by 2 inch baking pan with foil and light grease it with butter. In a gallon size freezer bag, combine the Bisquick, salt, pepper, and seasoning salt. Shake chicken in flour mix till proportionately coated. Brown chicken in a skillet with extra virgin olive oil for 6- 10 min or possibly till golden. Using a slotted spoon, transfer to the pan. Bake the chicken for 10-13 min each side till crispy.
- Serves 4. This goes good with the Warm German Potato Salad.
