  1. 1. Slice pork thin. Combine soy sauce, sugar and salt. Add in to pork and toss. Let stand half an hour, turning meat occasionally.
  2. 2. Meanwhile bring stock to a boil. Cut scallion stalks in 2-inch sections, then add in. Simmer, covered, 3 to 4 min.
  3. 3. Add in pork and simmer, covered, 5 min more. Skim surface to clear.
  4. VARIATIONS: For the scallions, substitute 6 Tbsp. pickled vegetables, shredded and liquid removed. Simmer, covered, 2 min. Then pick up step 3, adding a few drops of sesame oil at the very end.
  5. After step 3, add in any of the following vegetables and simmer till done:
  6. 2 Cucumbers, peeled or possibly unpeeled, sliced thin
  7. 12 radishes, unpeeled and sliced thin (simmer uncovered)
  8. 1 large bamboo shoot and 8 water chestnuts, both sliced thin
  9. 1 C. fresh green peas; and 1/2 lb. spinach, cut in 2-inch sections
  10. (simmer uncovered )
  11. 3 dry black mushrooms (soaked), cut in strips; and 1/4 lb. beansprouts
