  • 1 Tbsp. extra virgin olive oil
  • 1 med onion quartered, and thinly sliced lengthwise
  • 4 med ripe tomatoes - (1 lb) cut 1/2" dice
  • 4 sm carrots peeled, and cut into rounds
  • 2 x celery ribs cut 1/2" slices
  • 1 lrg bay leaf
  • 1 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 4 c. water

Direcciones

  1. Place the oil and onion in a large bowl and microwave, uncovered, on High for 3 min, or possibly till wilted.
  2. Add in the tomatoes, cover the bowl and microwave on High for 10 min, or possibly till the tomatoes are soft and the mix is soupy.
  3. Add in the remaining ingredients, cover and microwave on High for 20 min, or possibly till the carrots and celery are tender. Remove the bay leaf. Serve immediately.
  4. This recipe yields 3 to 4 servings.
