Receta Bearnaise Sauce
Ingredientes
- .¼ c wine vinegar
- ¼ c dry white wine
- 1 tbsp shallots, minced
- 1 tbsp fresh tarragon, minced (or ½ tbsp dried)
- ¼ tsp pepper
- Pinch of kosher salt
- 3 egg yolks
- 2 tbsp cold butter
- ½ c to 2/3 c melted butter
- 2 tbsp tarragon, minced
Direcciones
- Boil vinegar, wine, shallots, herbs, and seasonings over medium heat until liquid has reduced to 2 tbsps. Let cool. Beat the egg yolks until thick. Strain in the vinegar mixture and beat. Add 1 tbsp of the cold butter and thicken the egg yolks over low heat. Beat in the other tbsp. of cold butter, then the melted butter by a drizzle. Correct the seasoning and beat in the tarragon
