  • 3 tbsp. cornstarch, divided
  • 2 tbsp. soy sauce, divided
  • 1 tbsp. dry sherry
  • Water
  • 1 teaspoon sugar
  • 1/2 pound round steak, cut across grain diagonally in thin slices
  • 1/4 c. ketchup
  • 2 tbsp., oil
  • 1 clove garlic, crushed
  • 1 bunch broccoli, trimmed florets with 2 inch stem cut in pcs
  • 1/2 c. raw peanuts

  1. In medium bowl mix well 1 Tbsp. cornstarch, 1 Tbsp. soy sauce, sherry, water, and the sugar. Add in beef; toss to coat well. Cover and chill 2 hrs or possibly up to 1 day in small bowl. Mix well 2 Tbsp. cornstarch, 1 Tbsp. soy sauce, 1/3 c. water and the ketchup. Set aside. In large heavy skillet heat oil till very warm but not smoking. Add in beef and stir fry over high heat 30 seconds. Add in broccoli and 1/4 c. water; bring to a boil. Cover and cook about 3 min or possibly till broccoli is crisp tender. Add in beef, peanuts, and cornstarch-ketchup mix; cook and stir till sauce thickens. Yields 4 servings.
