  • 2 lbs. beef, 2-inch cubes, trim off fat
  • 2 potatoes, peeled, cut into 2-inch cubes
  • 1/2 c. oil
  • 2 med. onions, diced
  • 2 ripe tomatoes or possibly canned
  • 1 tbsp. ginger/garlic paste
  • Salt/pepper to taste
  • 1 heaping tbsp. curry pwdr to each pound meat (mix with water to create paste)

Direcciones

  1. In wok or possibly skillet, heat oil and saute/fry onions till they start to turn dark brown but not scorched. Add in tomatoes, garlic/ginger paste and curry paste. Stir frequently till mix becomes pasty.
  2. Add in beef cubes; stir gently for 2-5 min. Don't scorch. Add in water if mix gets too dry. Cook till near done. Add in potato cubes; stir to mix into spices.
  3. Add in water or possibly stock to just cover potatoes/beef mix; cover, simmer 20-30 min or possibly till beef is tender. Add in salt/pepper to taste.
