Receta Beef Jambalaya

Ingredientes
- 275 gm fillet steak
- 4 x level tsp mild chilli pwdr
- 1 x salt and freshly grnd black pepper
- 2 x celery sticks
- 2 x red peppers oil
- 140 gm pack chorizo sausage sliced and cut into strips or possibly 125g cubed
- 1 med onion roughly minced
- 2 clv garlic crushed
- 275 gm long grain white rice
- 1 x level tbsp tomato paste
- 1 x level tbsp grnd ginger 2 level tsp cajun seasoning )
- 600 ml beef stock
- 8 lrg cooked prawns shelled salad leaves such as lambs lettuce to serve
Direcciones
- Mix the sliced steak with 1 level tsp each mild chilli pwdr and grnd black pepper.
- Cut the celery and peppers into thin 50mm strips.
- Heat 1 tbsp oil in a large frying pan on the boiling plate and cook the chorizo till golden brown.
- Add in the celery and peppers to the pan and cook till just beginning to soften and brown.
- Remove from the pan and set aside.
- Add in 2 tbsp oil to the pan and fry the steak in batches; set aside and keep hot in the simmering oven.
- Add in a little more oil to the pan if necessary and cook the onions.
- Add in the garlic rice tomato paste remaining chilli pwdr grnd ginger and cajun seasoning then cook for 2 min till the rice turns translucent/soft.
- Stir in the stock season with salt and bring to the boil.
- Cover and transfer to the simmering oven for about 20 min till the rice is tender and most of the liquid absorbed (add in a little more water during cooking if necessary).
- Add in the reserved steak chorizo peppers celery and prawns.
- Heat gently on the simmering plate stimng till piping warm.
- Adjust the seasoning and serve with salad leaves.
- Cajun seasoning can be found in the spice section of most supermarkets. If you find the dish too spicy serve it accompanied with a little soured cream as this will take away some of the heat. Jambalaya is a traditional cajun dish similar to paella but with more spice. Its great with a crisp green salad and a sharp lemon dressing. If desired your food really warm and spicy add in tabasco sauce to taste at the end. Altemabvely allow your guests to add in their own.
