Receta Beef Soup And Egg Dumplings

Ingredientes
- 1 1/2 lbs. grnd beef
- 2 c. minced celery
- 2 c. sliced carrots
- 1/2 med. size onion
- 2 c. minced potatoes
- 1 can stewed tomatoes (optional)
- 6 large eggs
- 1/2 c. lowfat milk
- 1/2 teaspoon salt
- Flour
Direcciones
- Brown grnd beef. In large soup pan add in 8 cups water. Add in grnd beef and all vegetables. Bring to boil, then simmer till vegetables are tender. In medium size bowl add in 6 large eggs, 1/2 cup lowfat milk and 1/2 tsp salt. Beat well. Add in flour in small amounts till batter pulls apart when lifting spoon.In 2 qt sauce pan boil water. When water comes to boil, add in 1 tbsp of batter at a time to create dumplings. When they float to the top, take out and add in to soup. Simmer another 45 min. Serve.
