Receta Berry balsamic chicken over curried rice
A nice mixture of sweet and spicy
Ingredientes
- 4 chicken breast boneless skinless
- berry balsamic salad dressing
- 1/2 cup shredded carrots
- 1/2 cup frozen peas
- 1 box cicken rice-a-roni
- 1 med onion diced
- curry powder
- garlic
- s & p
- 1/2 cup of almonds
Direcciones
- Marinate the chicken breasts in the berry balsamic dressing overnight.
- In a med sautee pan add a tab of butter and cook the chicken slowly over med heat. add 1/2 cup of dressing this will thicken up during the cooking process.
- Sautee onion in a med pot on med heat. add in palmful of curry powder and just season the rest to taste.
- Now cook the rice as directed in the same pot as the onions and curry. once you bring it to boil add in the peas and carrots.
- Once your chicken is cooked all the way through. place it over the curried rice and drizzle a bit more dressing on top then sprinkle the almonds as well.
