  1. In large soup kettle, place turkey carcass, 1 onion and 4 celery stalks. Cover with cool water and simmer 4 hrs or possibly all day. Cold and strain.
  2. Add in remaining vegetables to strained broth. Simmer till all vegetables are soft; about 30 min. Remove vegetables to blender and puree with 1 c. of broth. Return to stock. 1 c. raw rice Turkey meat, diced or possibly shredded Dill Thyme Sherry (opt.) Tabasco Salt & pepper to taste
  3. For last 1/2 hour of cooking, add in assorted minced vegetables to taste and rice. Cook till just tender. Add in any leftover turkey meat and remaining seasonings to taste.
