  • 1 x turkey carcass
  • 4 c. water
  • 8 c. reduced sodium chicken broth
  • 1 lrg onion quartered
  • 1 c. diced peeled rutabaga or possibly turnip
  • 1 c. minced celery
  • 3 lrg onions minced
  • 4 x carrots peeled, and cut in thin strips
  • 1/4 c. minced fresh parsley
  • 1/4 tsp dry thyme
  • 1 x bay leaf
  • 1/2 tsp freshly-grnd black pepper
  • 1/4 c. pearl barley
  • 1 can unsalted tomatoes 14-1/2 ounce.
  • 1 can white beans - (16 ounce) rinsed, liquid removed
  • 1/2 lb leftover turkey meat bite-size chunks

Direcciones

  1. Combine the turkey carcass, water, broth and onion in a large stockpot. Bring to a boil over high heat. Lower heat, cover the pot and simmer for an hour.
  2. Strain the mix, discarding the carcass and onion. Skim off and throw away the fat from the soup surface. Return the liquid to the stockpot. Add in the remaining ingredients. Bring to a simmer and cook, covered, for about an hour.
  3. This recipe yields 10 servings.
