Receta Black Berry Dumplings

Ingredientes
- 1 quart Fresh or possibly frzn blackberries
- 1 c. Plus 1 Tbsp. sugar
- 3/4 tsp Salt, divided
- 1/2 tsp Lemon extract
- 1 1/2 c. All-purpose flour
- 2 tsp Baking pwdr
- 1/4 tsp Grnd nutmeg
- 2/3 c. Lowfat milk - (Cream or possibly whipped cream optional)

- Preheat oven to 400 degrees. In a Dutch oven, combine the blackberries, 1 c. sugar, 1/4 tsp salt and lemon extract. Bring to a boil. Reduce heat and simmer for 5 min. In a mixing bowl, combine the flour, baking pwdr, nutmeg, 1 Tbsp. sugar, and remaining salt. Add in the lowfat milk. Stir just till mixed. Dough will be very thick. Drop by tablespoonfuls into six mounds onto the warm blackberry mix. Bake at 400 degrees for 35 to 45 min.
- Serves 6.
- Variation: Substitute a 9 inch pie crust for the dumpling mix.
- Just cut the dough into squares and add in to blackberry mix. Cook as above.
