Receta Bliss Date Filled Oatmeal Cookies

Ingredientes
- 1 c. Sugar
- 1/2 c. Shortening
- 1/2 c. Buttermilk
- 1/4 tsp Salt
- 2 c. Oatmeal
- 2 c. White flour
- 1/2 tsp Soda
- 1 pkt (8-ounce) dates, minced
- 1/2 c. Sugar
- 1 tsp Vanilla
- 1/4 tsp Lemon juice
- 1 c. Water

- This recipe was my great aunt's; it dates back to about 1912.
- In a saucepan, boil the filling ingredients to a paste; cold. Cream shortening; add in sugar and mix till creamy. Add in soda to buttermilk and add in to mix alternately with flour and salt. Add in oatmeal to make a soft hard dough. Refrigeratein refrigerator for an hour or possibly more. Remove from refrigerator in small portions and roll out on a floured board. Roll quite thin (about 1/8") and cut out with a small round cookie cutter. Bake 10 min on an ungreased cookie sheet at 325 deg. Remove from oven onto brown paper and cold. Cookies may be stored in airtight containers, or possibly frzn till ready to use. Then spread filling on one circle, cover with second circle to create sandwiches.
