A Bacon Lettuce and Tomato Sandwich in salad form.

  • 1/2 pound bacon
  • 2 pounds tomatoes, preferably dry farmed, quartered
  • 2 cloves garlic, slightly crushed
  • 1/2 loaf day old sour dough boule, Crust removed and torn into chunks
  • 6 cups Lettuce of choice
  • 1 Tablespoon Red Wine Vinegar
  • 1/3 cup plus 3 Tablespoons Olive Oil, divided
  • Sea Salt and Pepper

Direcciones

  1. Cut Bacon into 2 inch pieces and fry to desired crispness.
  2. In a 2nd frying pan heat 1/3 cup olive oil with the garlic cloves. When oil is hot fry the bread in batches till crispy and browned.
  3. Toss the bacon, fried bread, quartered tomatoes and lettuce together in a serving bowl, sprinkle with 1 Tablespoon vinegar and enough olive oil to lightly coat. Season with salt and pepper.

    It's been hot in the bay area this week, so I thought I'd make a salad-as-dinner for my kids. I had locally farmed organic cherry tomatoes, so I put this together. Total hit! There's nothing like fried bread - but put that together with sweet tomatoes, a hint of garlic and some thick bacon! Wow. My kids even ate it up. Highly recommend as a great lunch or dinner in the backyard with friends and family. Thanks Mary!
